Can't pick just 5. I'll throw some of my favorites out there though (in this genre): Fred Eaglesmith is the best, James McMurtry, Willie is I guess actually the best, Bruce Robison is good, Max is also good, Chris Knight put out a great record with "pretty good guy", thrift store cowboys have a phenomenal live show, I like that lyle lovett record "step inside this house" a lot, can't think of any more right now. A better question might be - which bands do you hate the most?

Funny you mention Son Volt. I was listening to Okemah and the Melody of Riot yesterday. I bought it a few months ago...gave it a few spins...loved it, and cast it aside. I had forgotten how good it is. Been a big Son Volt fan ever since I first heard Drown about 10 years ago.
I have to add Joe Ely to that list just on Honkeytonk Masquerade alone.
